Sergio A. Torres, MS, RDN has a passion for food. He is a graduate of Colorado State University earning a bachelor's in Nutrition and Food Science, and of Case Western Reserve University where he earned a master's in Public Health Nutrition. As a Registered Dietitian Nutritionist, he is trained to work in many areas of food and nutrition. He is also a co-owner and operator of a food truck, Rocky Mtn. Coqui in Fort Collins, CO.

Rocky Mtn. Coqui is a family-owned business with the goal of bringing a taste of Puerto Rico to Fort Collins. It is the first Puerto Rican food truck in Northern Colorado and began serving food in October 2019. The business is owned and operated by siblings Sergio Torres and Maria Torres with the help of their mother Pilar De Jesus. The family looks forward to growing their business in Fort Collins, a place they enjoy and a community that embraces them.
